Stephanie brought some delicious cookies to the party:

COCONUT MACAROON COOKIES

1 1/3 cup flaked coconut
1/3 cup sugar
3 T. flour
1/8 tsp. salt
2 egg whites
1/2 tsp. almond flavoring

Combine coconut, sugar, flour and salt in mixing bowl.  Stir in egg whites and almond flavoring; mix well.  Drop from teaspoon onto parchment paper lined cookie sheet.  Bake at 325 for 20 minutes, or until edges are golden brown.  Remove from baking sheet immediately.  Makes about 12 cookies.

Melt 1 cup of chocolate chips with about 1 tsp. of cooking oil or shortening, stirring every 30 seconds.  Add more oil or shortening if it is too thick.  Dip cooled cookies into chocolate and let set on wax paper.  You can speed up the setting process by having the wax paper on a cookie sheet and placing it in the refrigerator.
