Did I mention that a few weeks ago we went to dinner with JB & Jamie Royer and the head chef man at Uchiko made our meal.  We never looked at a menu.  He just kept sending stuff to our table.  Ah-mazing!  He even sent us home with some beef that had been soaked or roasted or something for 72 hours and was part of the best thing on the menu.
